When I’m working with food in the “nutrition lab” I’m always thinking, “how can I prepare this food in the most nutritious way?” This mindset has led me to some wonderful discoveries.
Back in 2001, one of my professors mentioned in class that the peel of a kiwi is edible. To me, this was one of the greatest discoveries since the wheel.
Of course, I had to put it to the test. I was surprised to discover that it actually tasted okay. Great, more fiber, and a cool party trick.
The fact is, the skin of many fruits and vegetables contain various chemicals that protect it from its environment. When we eat these foods the same chemicals protect us.
Eat the skin!
